Book Description
Back of the Book
Every time you key in a word to search on Google, launch a Microsoft product on your laptop or mobile phone, click on Amazon to buy a product, post a picture on Facebook, book an airline ticket on a travel website, use a map to navigate through city traffic, take a taxi ride using Uber or Ola, make a financial transaction on an app or through a leading bank, scan a QR code to make a micropayment through UPI, watch an animation film on your favourite OTT platform, pop a pill or vaccinate your child, you are most likely either using a technology developed partly or fully in Hyderabad, getting connected with a data centre or a business processing office located there or using a medical product manufactured there.

Beyond Biryani is the fascinating story of Hyderabad's transformation to becoming a truly globalised city.

About the Book
Hyderabad-the city of nawabs, the Charminar and biryani? Or a city plugged into the neural network of global technology? Hyderabad is both of those cities all at once, and there is much more to it than meets the eye.

Beyond Biryani maps the journey from what was at best a proto-colonial city under a quasi-Mughal princely state till the 1940s to the modern and vibrant metropolis that Hyderabad is today. In the pages of this book, we see the beginnings of that transformation: the Britishers who steered the city in the direction of developing a scientific temper and the nawabs who championed the cause. And we discover the workings and patterns of the change: from the Chloroform Commissions to Ronald Ross's discovery of malaria; from the setting up of Osmania University, India's first vernacular university, to the newly independent India pushing for industrial laboratories, scientific research and strategic forays into nuclear fuel and missiles. Finally, we discover how, in the last thirty years, Hyderabad has taken giant leaps towards becoming a truly globalised city.

An alternative history of the city of Hyderabad, Beyond Biryani is a must-read for anyone interested in how a city can catapult towards modernity while staying rooted in its cultural heritage.

Introduction
THE CITY OF NAWABS AND BIRYANI. THAT IS THE COMMON THE stereotype attached to Hyderabad. Ever since the first low-cost airline appeared in 2003-with no meals provided on board-it has been a running joke that any aircraft taking off from Hyderabad has the enticing aroma of the rice-and-meat dish wafting through it high up in the skies. Afterall, so many passengers bring along packs of biryani to eat on the flight. Even as airlines now serve food on board, for many travellers the biryani wins hands-down in comparison to the add-water-and-wait-to-eat meals.

Acknowledgements
WRITING THIS BOOK ON THE JOURNEY OF HYDERABAD WRITING has been a labour of love, and I would like to express my deepest gratitude to all those who have contributed to its completion. The research and exploration involved in unravelling the rich historical landscape of Hyderabad would not have been possible without the support and assistance of numerous individuals and institutions.

First and foremost, I thank the Jawaharlal Nehru Memorial Fund (JNMF) for its generous support in the form of the Jawaharlal Nehru Fellowship granted to me in 2020. I am grateful for the confidence that the Trustees and members of the Selection Committee placed in me and my proposal. Dr N. Balakrishnan, administrative secretary of the Fund, extended all necessary help despite the constraints placed by the COVID-19 pandemic. The Fund's commitment to promoting academic research, cultural understanding and historical scholarship is truly commendable.
